How much do I love my mummy? Let me count the ways…

My mum is the best mum in the world. Just sayin’.

She lives in Canada, and I, California…so I miss her dearly these days.

My mum is funny, witty, smart and beautiful. And I wouldn’t trade her for the world.

It’s days like Mothers Day that sometimes I wish I could just snap my fingers and have her here. If  I could do that, I’d throw down the best Mother’s Day I could – which, of course, would involve food. It feeds the soul, you know, and tends to be one of the ways I show my love.

Breakfast in bed would be the way to start the day. I think I’d make her Ricotta Pancakes with Honeycomb Butter, a fresh cup of home brewed coffee and Broiled Grapefruit with cinnamon and sugar. A sweet way for the sweetest woman in the world to wake up.

For lunch, something fresh, like a Vietnamese Surf and Turf Salad, and then a stroll in the sun.

While I cook, I’d have Erik shake up a Pink Slipper for her to relax and sip on.

I think I might make her Scallops with Leeks in Champagne Sauce for dinner, because my mum deserves champagne all day long.

Or Cioppino, because a lot of love goes into making it.

If she was here in California for Mothers Day, I’d bake her a Chocolate Raspberry Pavlova , Chocolate Souffle Cupcakes with Mint Cream or maybe a Southern Style Strawberry Cake (there’s something so mum about a pink cake) and pour us a couple of glasses of straight up champagne to cheers to how wonderful she is.

Every mum deserves bubbly and a ton of thanks and love.

I’d make her put up her feet before bed and pour her a nice rich glass of red wine to sip while she enjoyed a Best Cocoa Brownie, and make sure she climbed into the fluffiest bed ever.

Hell, I’d make her anything her heart desired.

Most of all, I just wish she was here so I could give her a big fat smooch!

Miss you mum. Love you even more.
