So, as you might already know, I generally don’t eat meat. However…lately…I’ve got a thing for bacon baked in the oven (thanks to Tracy of Shutterbean and the delish breakfast she cooked at HomeFries U).

I’m not afraid to admit this love for bacon anymore…I’m shouting it loud and clear.

And this sandwich – OMG. Amazing. The perfect blend of everything necessary on this planet.

Makes 2 Sammies

  • 2 Acme buns/rolls (these are the best, or use what you love)
  • 3-4 sliced baked bacon
  • 2 eggs
  • 2 TBSP milk (almond or regular)
  • 2-4 slices Gruyere cheese
  • sliced tomato
  • 2 TBSP chopped cilantro
  • you choice of sauce (ketchup, hot sauce, aioli…whatevs…)
Toast the buns. Whisk the eggs and milk together, scramble over med high heat. Pile the eggs, bacon, cheese, tomatoes and cilantro on the buns. Devour immediately.
