So it’s officially summer.

Summer = loads of fruit…and, for people like me, lots of booze.

But what could be better than fruity booze. C’mon, everyone’s doing it – like Tracy from Shutterbean, David Lebovitz and Joy the Baker (yes, she not only bakes, she infuses booze!).

I did this weeks ago, during strawberry and cherry season, because I had a lot of leftovers in my fridge…and I’d rather go out and buy a big jug of vodka than toss unused fruit.

Totally makes sense to me.

I’m not going to write a recipe for this, I’m going to tell you how to do it. It’s super easy.

Choose some booze (I used vodka, but I’m sure Tequila, rum and gin would work well too). Choose some fruit (I used strawberries and cherries…but I dream of mango and blueberries, lemons and limes too!!). Cut the fruit up and put it in a jar with a lid (Ikea is a great place to find jars). Pour the booze over the fruit so all the fruit is covered. Close the jar and put in a cool dark place (I put mine on a shelf, but you could put it in the fridge too). A few times a day swirl the jar around. Do this for at least 3 days…or, like me, forget about it and realize over a week later that the jars are there. Don’t worry, any amount of time works – it won’t got bad.

Strain the booze into another jar – I used my Chemex coffee maker with a filter to strain my fruit and all the bits. And find a jar or bottle to store the now fruit laden vodka (or whatnot) so that you can make all sorts of drinks this summer. Then start your next batch, because it won’t last that long it’s so darn delicious. Oh, and on a side note, your fruit will turn white as all the flavor and color gets sucked into the alcohol. Awesome eh?
