So Mr. Peter Reinhart (the pimp of bread making in my opinion) has done it again. This is an amazing bagel recipe. We’ve done it with sesame seeds, cranberries…and this time with dark chocolate chunks and dried cherries. I’m not going to post the whole recipe, because there is an amazing post “How to Make Bagels: A Users Manual” for Epicurious. You can find it here. It’s not difficult and doesn’t make much active time – really!
I just added a bunch of chocolate chips and dried cherries by hand right before the initial 60 min rise.
Do what you want…add what you’d like. These turn out AMAZING.

I have a serious soft spot for bagels but I’ve never tried to make them (though I’ve dreamed about it). Do you use malt powder when you make yours? I wonder if it’s something that’s alright to leave out or if I should break down and order some online.
Most definitely make them!! I use barley malt syrup…and think its a must for both the bagels and the poaching liquid. It adds to the wonderfully chewy texture and makes them closer to Montreal Bagels (google it – they’re amazing)… I’m not sure where you live, but you should be able to get barley malt syrup – I got it at Whole foods and I bet there’s a good chance they carry it at Safeway. Let me know how it goes!
